Makes enough for 10 guests
To make the Clementine Cordial (produces 750ml)
300ml fresh clementine juice
200ml fresh lemon juice
500g fine sugar
To make the Premix (yields 850ml, to serve 10)
400ml decent vodka
100ml London dry gin
150ml peach liqueur
200ml clementine cordial (from the recipe above)
Fresh cranberries, for garnish
Mandarin essential oil, for finishing
Method
To prepare the Citrus Syrup: Place the listed ingredients into a pot, bring to a light boil, mixing until the sugar dissolves. Then, take off the stove and leave to cool entirely. Pour into an sterilised bottle, close it and refrigerate it chilled, it will last for about one month.
To make Batch Mix: Combine all the liquids into a big jug, let it rest for an hour, then pass it through preferably using a fine cloth, to ensure it's completely strained.
For serving: Add 85ml from the batch mix to a stirring glass filled with ice, and stir lightly for one minute until cold. Strain into an chilled martini glass or a similar vessel, top with some cranberries and complete it by giving it a brief mist of the essential oil over the top.
